Just another reason to get up early and drink your coffee before hitting the gym for your workout. Apparently, coffee is a secret superfood. We enjoyed a nice visit with family this week. While looking for the latest news on espresso and coffee things we came across a new product that's hitting the market place, it's coffee flavored wine. Now, we have had our coffee made into some fine coffee liquors, but wine is a new idea for us. What are your thoughts? We are having so much fun with our small coffee tree harvest right now. Each day Dave eyes the tree for new ripe coffee cherries and then picks just the ripest ones to begin the process.
After picking the ripest coffee cherries then we float them in a sink of water twice each time skimming off the floaters. After floating the coffee cherries we remove the husks of the coffee cherry exposing the pair of green beans inside their parchments. At this point typically the beans are washed a third time then dried to an 11% moisture content while aging in their parchments for about 2 months. Then the parchments are removed, the beans are sacked and ready to be roasted. Yes, if you were describing our coffee tree at Vista Clara Coffee. Red white and green are the theme at Vista Clara Coffee these days. If you have a chance be sure to drop by the roasting plant and see our coffee tree in full production. Right now we are enjoying the fragrant blooms which give the office a beautiful fragrance similar to gardenias. Then if you look carefully underneath the leaves you will find both green and red cherries growing and waiting for the right time to be hand picked and chosen for harvesting. Once you look at the tree you will understand fully why coffee is hand picked over a long period of time ensuring each cherry is picked at it's peak. We are pleased that our tree is indeed both flowering and producing it's fruit as that is the sign of an even climate and means we're doing it right. It's been so fun to mimic the harvest that's been happening in Costa Rica except on a much smaller scale. Often the cherries are hiding but here is a branch that is loaded with fruit. The most recent edition of Coffee Talk magazine has an article titled The Last Mile, hot time for a cold brew, written by Giorgio Milos. In the article he states. "Those better-developed palates were growing weary of substandard iced coffee. Where "pour over" meant not an open filter cone and glass carafe, but rather the unforgiveable act of pouring hot coffee over ice cubes and pushing it across a counter, or pulling a bulk container of coffee out of a fridge without understanding the dynamics of coffee gone cold....Cold brew, the method of choice for new-breed American aficionados and wildly popular in Japan for years, has gone from behind the bar to retailers shelves...and has become a worldwide hit.
We had such a great evening at the Fundraiser Dinner for the medical team being sent to Santa Elena Estate. We enjoy being a part of such an innovative community and have been proud to be considered part of the Specialty Coffee Pioneers. Here are some photos from that evening, along with the first roaster over 100,000 lbs of coffee on. We always enjoy visiting the Vashon Island Roasterie which is also home of the Stewart Brothers Coffee Museum. Here are more photos inside, including an early small batch roaster at the bottom.
